Full-City Roast
Taken right to the edge of the second crack, depending on bean texture. Generally yields no surface oil. Smooth, rich, and vibrantly fresh.
French Roast
Pushed into the second crack until just one drop of oil appears at the tip of the bean. Very rich, featuring beautiful caramelized sugars and profound smoothness.
Italian Roast
Taken entirely through the second crack until the bean is fully coated in a glistening oil. Incredibly heavy, smooth, rich, and smoky.
